Basic Vanilla Granola (gluten-free option)

Making granola from scratch is so easy and incredibly delicious, much cheaper to make at home and often healthier than traditional granolas you buy at the grocery store. I was so shocked at the price and amount of sugar in a protein granola I recently purchased. I decided it was time to pull out this basic vanilla granola recipe and make a batch.

I grew up eating all different flavors of homemade granola like, peanut butter, basic (similar to this recipe) Chocolate chip and we would also make granola with different dried fruits and nuts. We would eat it as cereal with milk, or on top of homemade smoothies and even on top of our homemade apple sauce!

My toddler loves to just snack on this basic vanilla granola and if I let her, she’d eat the whole batch in an afternoon lol. I think its wonderful that she enjoys it as it’s very inexpensive and easy to make and there isn’t any sugar in this recipe. We try to keep a container full around in case we need a quick breakfast, snack or to top our favorite Fresh Fruit Salad or smoothies.

To get started with this Basic Vanilla Granola recipe, preheat your oven to 300 degrees and prepare a baking sheet by lining it with parchment paper. In a large bowl mix the oats, chopped nuts, (I use a mini food processor to chop the nuts), cinnamon and salt.

For the wet mixture you can melt the coconut oil in a small sauce pan or in the microwave. (typically take 1 minute in the microwave) Once melted add in the honey and heat for another 30-60 seconds. Add in the vanilla and than pour over the oat mixture. Mix everything together until ever oat and nut is covered.

Pour granola onto the prepared baking sheet and spread it out until its evenly distributed around the baking sheet. Place in the oven for 25-30 minutes or until the edges start to turn golden. Remove from oven and let cool completely before breaking into pieces. The granola will the crunchier as it cools off. Store in a airtight container and enjoy!

Ingredients
  

  • 3 cups Rolled Oats (certified gluten-free)
  • 1 cup Nuts chopped (walnuts, almonds or pecans)
  • 1 tsp Cinnamon
  • ¼ tsp Salt
  • ¼ cup Coconut Oil
  • cup Honey
  • 1 tbsp Vanilla

Instructions
 

  • Preheat oven to 300℉ and prepare a baking sheet by lining it with parchment paper.
  • In a large bowl combine the dry ingredients (oats, chopped nuts, cinnamon and salt) Set aside.
  • In a sauce pan melt coconut oil or melt in the microwave (takes about 1 minutes) Once melted, add the honey and heat for another 30-60 seconds. Whisk in the vanilla.
  • Pour wet ingredient mixture over the dry ingredients and mix until all the oats are coated.
  • Bake for 25-30 minutes or until granola starts to get golden around the edges. Let cool completely before breaking into pieces. It will get crunchier as it cools. Store in a airtight container!

Notes

We like using Almonds the best for the nut choice.
