Easy Fresh Fruit Salad

Fresh Fruit Salad is as refreshing as it sounds. It’s like summer in a bowl and although currently summer is ending in most of the US, here in Florida we are hanging onto it a little longer.

When I was a child, I remember eating fruit salads often for breakfast with granola on top. We would typically make fresh muffins or banana bread to go along side the fruit salad. On those mornings the kitchen would smell delicious and be so welcoming.

I still love eating my fruit salads with granola and muffins or banana bread is amazing along side it but currently we’ve been enjoying avocado toast!

You can basically use any fresh fruit you love, to make this. Depending on what time of year it is, some fruits may not be in season so you might have to get creative. Here in Florida we still have mangos and pineapple available. Another fruit that I love putting in my fruit salads are kiwis. Not only do they taste so good they also add a fun green color to the mix. I don’t know about you but I not only want my food to taste yummy, I also like when it looks good too!

To make this fruit salad, all you need to do is peel and chop. To prepare the pineapple I cut off both ends and than sit it up right on the cutting board and cut sections of the peel of until it’s all removed. One of these fancy pineapple corer and peeler would be pretty handy. Peel the mango and than cut the flesh off the mango seed. It can be a little tricky if you’ve never dealt with a mango before lol. You can google “how to cut a mango” and a lot of different methods will pop up which I find pretty interesting.

The rest of the fruit in today’s recipe you just chop to the size you want. I typically cut the grapes in half or in quarters and the strawberries in half and then cut the halves into slices. This recipe calls for orange juice and freshly squeezed is the best but regular orange juice works too. I don’t have a large enough citrus juicer for oranges so I cut them in quarters and use my lemon/lime squeezer. For the lemon I cut in half and use the same lemon/lime squeezer.

Mix everything together and serve!

Easy Fresh Fruit Salad

This Fresh Fruit Salad is like summer in a bowl. It's great on it's own with granola on top or you can divide it into small bowls or cups for an appetizer. It's makes a great snack for children.

Ingredients
  

  • 1 Pineapple peeled and cored
  • 1 qaurt Strawberries diced
  • 1 pint Blueberries
  • 2 cups Grapes, halved
  • 1 Mango peeled and chopped
  • ½ cup Orange Juice freshly squeezed is the best
  • 1 Lemon, juiced

Instructions
 

  • On a large cutting board, peel and core the pineapple than cut into bite size pieces. Peel and slice the mango. Wash and cut the other fruit as desired.
  • In a large bowl dump the prepared pineapple and mango along with the strawberries, blueberries and grapes.
  • Add the juice from 1 lemon and the juice from an orange or ½ cup regular orange juice.
  • Mix together and enjoy!

Notes

Bananas, Kiwis, and Raspberries are also great to add in this recipe.
